I quite often have left over veges from dinner that I like to turn into breakfast!

  1. mix 6 eggs with a dash of milk and salt and pepper
  2. poor mixture into greased muffin tray, fill about half way up
  3. top with veges, sprinkle of cheese and ham
  4. bake for 20 minutes
